Is Martina's Hot Sauce shelf stable?

Not exactly... We are NOT your standard grocery store hot sauce. Our ingredients are never pasteurized in order to ensure that you reap the full health benefits of our sauce. It is also raw and fermented, so refrigeration is required even before opening the bottle.

Is it OK to leave Martina's out overnight?

It sure is... we all forget to put things away sometimes, so no worries. Thankfully, fermented foods are on our side. The first side effect of non-refrigerated fermented sauce is pressure build up in the bottle. You might notice a similar sound to opening a bottle of kombucha. Just put it back into the refrigerator before consuming. You'll know if you've left your sauce out for too long because mold will become visible like with most foods. At that point it's time to throw it away.

How long is it good for?

For optimal flavor consume within 3 to 4 months. However, it can last longer if stored properly. Keeping your sauce refrigerated is the key to a lengthier shelf life.
