Pork Taco Meat

Ingredients
6 roma tomatoes, halves
6 garlic cloves
1/2 yellow onion, roughly chopped
3 lemons, juiced
1/2 bottle Martina’s Original Hot Sauce
1 tbsp honey
1/4 cup tequila or mezcal
2 lbs pork tenderloin or pork cut of your choice
Procedure
Step 1: Preheat the oven to 400 degrees. On a tray with parchment paper lay the tomatoes, garlic and onion. Drizzle with olive oil and season with salt and pepper. Roast until nicely charred.
Step 2: Once the tomatoes, onions, and garlic have cooled, add lemon juice, honey, Martina’s Original Hot Sauce and blend together, set aside.
Step 3: Season your pork with salt and pepper. Add olive oil to cast iron skillet and sear pork on all sides.
Step 4: Once pork is seared, pour in your sauce. Cover and bring down to a simmer for about 1 hour or until meat is tender. Remove from sauce and let cool.
Step 5: Cut meat into small pieces and reheat in a cast iron skillet. This will give you a good amount of char. Serve with the reserved sauce it was cooked in and your favorite taco topping!
