Smoked Turkey Croquettes
3 small bowls
medium soup pot
rubber spatula or wooden spoon
fryer or medium to large frying pot
2 cups chopped turkey meat
1/2 cup chopped ham
2 tbsp chopped cilantro
1/2 cup butter
1 yellow onion, finely chopped
4 cloves garlic, minced
1/2 cup all purpose flour + more for breading station
1/2 cup of breadcrumbs
3 eggs, beaten
2 1/2 cups milk or broth
2 oz button mushrooms, finely chopped
2-3 tbsp Martina’s Hot Sauce
salt and pepper to taste
Step 1: In a medium soup pan melt down butter on medium heat and add onions. Cook the onions for 2 minutes or until translucent.
Step 2: Add in mushrooms and garlic, stirring occasionally. Cook for another 5 minutes until aromatic and tender.
Step 3: Add in flour, cook the “roux” stirring and incorporating ingredients for about 4 minutes until flour is cooked through. After flour is cooked through add in cold milk and whisk. Whisk occasionally for about 5 minutes. Once milk has thicken, remove from heat and set aside.
Step 4: Once your base sauce is done add in turkey, ham, cilantro, Martina’s Hot Sauce and salt and pepper to taste. Mix to combine and set aside in refrigerator for at least 30 minutes to cool completely.
Step 5: After mixture has cooled, set up your breading station and heat up fryer oil to 350 degrees. For breading station you need 3 bowls; one with eggs, one with flour and one with breadcrumbs. Roll cooled mixture into 2 inch diameter balls. First dredge in flour, then egg and lastly breadcrumbs.
Step 6: Carefully place them in fryer oil and cook for about 4-5 minutes or until golden brown and delicious. Serve with some of Martina’s Spicy Mayo and enjoy!
