Martina’s Mac & Cheese

Equipment Needed

1 large sauce pot

1 medium sauce pot

1 strainer

1 whisk


1 lbs maccaroni 

¼  cup unsalted butter

¼  cup flour

1 tsp powdered mustard or yellow mustard

2 tsp Martina’s Hot Sauce

1 tsp cayenne

1 tsp smoked paprika

3 cups milk

½ tsp coarse ground black pepper

2 ounces gouda, shredded

 2 ounces mozzarella, shredded

 8 ounces sharp cheddar divided – 2 oz for topping, shredded 

 ½ cup breadcrumbs 

 2 tbsp fresh parsley chopped

 2 cloves garlic, minced





Step 1: Pre-heat the oven to 350 degrees. Cook the pasta to al dente as it will be baked and will cook longer than just in boiling water. Drain rinse and set aside.

Step 2: Add the butter to medium saucepan and melt on medium-low heat. Add the flour, mustard, cayenne, garlic, black pepper and paprika and whisk together until fully incorporated. Cook for another 5 minutes until the smell of cooked flour reaches your nose. Add milk slowly while whisking to keep the mixture well combined.

Step 3:  Add in all the cheeses in small increments, except for about 2 oz of cheddar for topping. Whisk until all cheese is fully combined. Season here with salt to your liking and add in Martina’s Hot Sauce.

Step 4:  Add the cooked macaroni back into the pot and toss with cheese sauce. Pour into a  baking dish and top with the remaining cheese and breadcrumbs. Bake for 20-30 minutes until the top is golden brown and cheesy!

Step 5: Sprinkle a few more breadcrumbs and some chopped parsley and enjoy!
